About the region: Los Nogales is a small 2 hectare farm located in Montecristo de Guerrero, Chiapas. The farm is managed by Jesus Alejandro Angel Perez. He grew up working the farmland with his grandparents, who gifted him a small plot when he turned 18. Los Nogales sits at 1525 meters above sea level, and is planted with Bourbon, Marsallesa, and Typica. Jesus processes his coffee on a small belt driven pulper at the farm. He ferments his coffee for 24 hours after pulping the fruit, and then double washes it to remove the sticky fruit mucilage before drying on tarps outside. His farm underwent organic certification, and is fully NOP Organic certified.
